Wind slowly and consistently, releasing and restarting each turn, until you feel resistance. That resistance means the mainspring is fully wound, so stop there. Do not force it further, this can damage the mainspring and escapement. Winding at the same time each day, ideally in the morning, gives the most consistent power and the most accurate timekeeping.
